Aam Panna

Description

Aam Panna is a traditional north Indian recipe for a classic dish of boiled green mangoes flavoured with cumin seeds and black salt. This is very ideal summer drink.It gives cooling and refreshing effect.

* Raw green mangoes-3 medium size
* Black salt-to taste
* Sea salt-to taste
* Sugar-2tbs(optional)
* Roasted cumin seed powder-1tbs
* Mint leaves, finely chopped -1 and1/2tbs
* Crushed ice-for garnish

Methods/steps

1. Wash the mangoes well then place in a pan, cover with water, bring to a boil then reduce to a simmer and cook until tender.
2. Drain and set aside to cool until you can handle them. Peel the skins away and remove the flesh. Mash the flesh in a bowl until pulpy then add the cumin seed powder, salts ,sugar and mint leaves.
3. Add the water to the mix and whisk to form a smooth paste. Cover and place in the refrigerator for 2 hours.
4. Check for taste and if too bitter add a little salt if too sour add a little sugar. Serve chilled with ice in tall glasses.
