Chicken Tikka

Description

This is a popular and traditional Indian recipe for grilling chicken. The rich marinade gives the chicken breasts a lot of flavor.

* Chicken - 500 gms of boneless chicken (breast or thigh) cut into chunks
* Ginger & garlic paste - 4 ts
* Turmeric powder - 1/4 ts
* Chilli powder - 1 tsp
* Garam masala - 1 tsp
* Cumin powder - 1/2 tsp
* Coriander(dhaniya )leaves - 2tbs chopped
* Salt to taste
* Curd - 1/2 cup beaten well
* 1/4 tsp or a pinch of orange food coloring(optional)
* Chat masala -1tsp

Methods/steps

1. Grind the chopped coriander (keep some aside for garnishing) and all other ingredients except curd and chat masala to a smooth paste in a food processor.
2. Pour the above mix into a large bowl and add curd. Mix well. Add the chicken pieces and mix well. Cover the bowl and refrigerate. Allow to marinate overnight.
3. Thread the chicken onto skewers and keep ready.
4. Preheat your oven or grill to a medium high temperature (200 C/ 400F/ )
5. Place the skewers on the grill racks in your oven with a tray underneath to catch drippings. Roast open till the chicken is browned on all sides and tender.
6. Remove from skewers and put the chicken in a plate. sprinkle chat masala on it.
7. Garnish  with lemon,tomato and onion rings and serve with green chutney.

Additional Tips

Boneless fish tikka can be made by this same procedure.
