Godara (Prawns Curry)
Description
Godara(prawns a kind of boneless fish) of river Ganga (fresh water) is very famous. There are many variety of prawns, lobsters, jhingas etc. So, prawns recipes are very popular among bhojpuriyas.This prawns curry is one of them.
Ingredients
* Prawns – ½ kg, shelled and defined
* Onions – 3, medium size, finely sliced
* Ginger paste– 1/2 tsp
* Garlic paste – 1tbs
* Tomatoes-2 medium sized(grated or finally chopped)
* Turmeric powder – ¼ teaspoon
* Chilly powder – 1 teaspoon as to taste
* Garam masala powder– 1 teaspoon
* Coriander powder-1tsp
* Bay leaves-2 or 3
* Cumin seed-1/2tsp
* Small cardamom pods-2 to 3(crushed)
* Cinnamon -1/2 ''
* Yogurt/curd - 2tbs
* Mustard oil-3tbs
* Salt – 1 teaspoon or adjusted to taste
* Chopped coriander leaves-for garnishing
Methods/steps
1. First, thoroughly clean the prawns. If they have their shells, remove them before rinsing. Then marinade with the turmeric ,salt,red chilly powder and yogurt keep aside while you prepare the rest of the dish.
2. Heat the oil in a kadahi over medium heat. Add the cinnamon cardamom, and bay leaves, frying for about 30 seconds while stirring. Now add the onions frying for about 5 minutes. The onions should turn a light golden brown. Stir frequently to keep the onions from burning to the bottom of the pan. Now, add the ginger-garlic paste, and stir into the rest of the mixture.
3. Then add coriander powder,tomatoes,fry for some time then add garam masala and marinated prawns Stir frequently and cook for 5 minutes in medium heat when oil seperates add 2 cup of water ,
4. Place the lid on the kadahi and allow the mixture to simmer for 10 to 15 minutes. The oil should separate and prawns will turn pink opaque when they are done.
5. Garnish with coriander leaves on the top ad serve with chapati or rice.


Additional Tips
Prawns should not be over cooked.
