Gurma

Description

Gurma is pure traditional bhojpuri sweet dish, made with raw or half ripe mango, sugar and wheat flour. It's very tasty and easy to make.

* Large half-ripe or raw mangoes- 2
* Sugar - 3 tbs or to taste
* Cumin seeds- 1/2tsp
* Aniseed- 1/2tsp
* Desi ghee - 1tbs
* Wheat flour- 2tbs
* Water,-2 cups, more for thinner sauce, less for thicker
* Ground cinnamon-1/4 tsp (optional)

Methods/steps

1. Peel and cut the mangoes through the seed. Remove the seed, then cut each half into four parts through the shell of the seed.
2. In a kadahi roast wheat flour for 5 minutes in medium heat.remove and keep aside.
3. Heat ghee on a pan putĀ  cumin seed and aniseed stir thenĀ  add the mango pieces while stirring constantly (like stir-frying) for a couple of minutes.
4. In a bowl mix flour and water (two cups) stir and mix well.and then add this mixture in a pan, stir then add sugar.
5. Let the mixture come to a boil on high heat, cover and reduce heat to low/medium. Simmer until mango pieces are well cooked.sprinkle ground cinnamon .
6. Add water to make it thinner, if you want, or cook down for a thicker sauce. Add more sugar, if desired. Serve with paratha or roti...

Additional Tips

Jaggery can be used in place of Sugar.
