Description
Jack fruit is very good substitute of non veg because it taste like mutton, and popular in bhojpurias.
Ingredients
* Jack fruit (kathal)-500 gm,
* Onion -300 gm,sliced
* Spring onion-100g(optional)
* Green peas-1 cup(optional )
* Ginger -1-inch piece,shredded
* Garlic-10-12 nos(kali) crushed
* Dry whole red chillies -4-6
* Coriander powder -1 tbsp
* Cumin seed-1 tsp
* Black pepper-1/2 tbs
* Turmeric powder-1 tea spoon
* Bey leaf (tej patta)-4-5
* Cloves-4-5 piece
* Cinnamon(daal chini) -1 piece
* Mace (javitri)-1piece
* Big cardamoms-4
* Small cardamoms-4
* Kashmiri mirch(chili powder)-1tbs (kashmiri mirch is less hot and gives more tempting colour )
* Salt -to taste
* Cooking oil- 100 gm
* Desi ghee-1 table spoon
Methods/steps
1. Peel wash and cut jack fruits into 2"pieces then marinate with little salt and turmeric powder.
2. Divide sliced onion into two parts ,then
3. Deep fry all the pieces of jack fruits till it become golden brown. Mix one part of sliced onion, and chopped spring onion
4. Slightly crushed the small and big cardamoms,cinnamon and mace.
5. In the remaining oil put tej patta, cumin, and another part of sliced onion and fry till becomes pink.
6. Add ginger ,garlic,and all the spices , fry it for 2 minutes then add chopped tomatoes and salt .
7. Then add green peas ,fried pieces of jack fruit with sliced onion stir it well for 5 minutes.
8. Mix 1/2 cup of water ,cover the lid and cook on low flame till the Kathal is tender.(for 15 minutes)
9. Garnish with desi ghee and coriander leaves and Serve hot with rice paratha or chapati.


Additional Tips
* While cutting jack fruit rub some cooking oil on hands and knife to prevent sticking.
* Jack-fruit can be use without fry for low calorie lovers.
