Pua

Description

Pua is a traditional Bhojpuri sweet, which is made on nearly all festivals but specially on colour festival Holi. Pua and maalpua are essential part to welcome guests on Holi. There are many different recipes for delicious Pua and maal pua.

* Refined flour(maida)-2 cups 
* Sugar-1  cup or to taste
* Grated dry coconut -2 tbs
* Fennel seeds (Saunf)-4tbs
* Raisins-1 tbs chopped
* Milk-2 cup or enough to make batter of dropping consistency
* Ripe banana -1 (make a fine paste)
* Desi ghee or cooking oil for frying
* Ground cardamom powder-1tsp

Methods/steps

1. Dilute sugar in warm milk
2. Combine all the ingredients( except ghee or oil )with diluted milk to make a  batter of dropping consistency,keep aside for half an hour .
3. Beat the  batter nicely.heat oil or ghee on a wok or kadahi (nonstick would be batter)
4. Now gently drop the ladle full of the batter,deep fry till golden brown.
5. Take out and spread on kitchen tissue paper to remove excess oil.
6. Fry all the puas like this. Your PUAS are ready to be served  either hot or cold  with bhuna kaleji, aaludam or mutton curry.

Additional Tips

If you want them to be soft then the batter should be thick but if  you want them to be crisp and thin then add water to the batter to make it thin. [but don't forget to  check the sugar if you add water]
