Description

Ratua (bottle guard rayta) is the pure bhojpuri side dish which is very similar to lauki rayta. But the taste is little bit different. It is made on every auspicious occasion.

* Curd (Yogurt)-2 cup
* Grated bottle gourd (lauki) -1 cup
* Roasted Cumin (jeera) powder-1tsp
* Plain and rock salt to taste
* Red chili powder to taste
* Mustard seed-1tsp
* Green chilly-1
* Ginger-1/2"
* Sugar -1/2tsp(optional)

Methods/steps

* Grind mustard seed,green chilly ,ginger and make a paste .
*  Boil grated bottle gourd  till soft, drain and cool it.
* Stir the curd with hand mixer.
* Add bottle gourd  and mix well. If curd is thick mix little milk or water.
* Now add both  salts,sugar, roasted cumin powder, chili powder, and ginger, chilly, mustard paste mix well.
* Keep in refrigerator for an hour or so.
* Serve ratua chilled.
