Thandai
Description
Thandai is a very popular refreshing drink of Bhojpuries as well as all over North India. This famous spicy, and dry fruit, saffron flavored milk that is traditionally prepared as an offering to Lord Shiva during the festival of Shivratri and during festival Holi. It is often mixed with bhang to make an intoxicating drink.
Ingredients
* Almonds -8 pcs
* Pistachios -8 pcs
* Poppy seeds -1 tsp
* Aniseed -1 tsp
* Black peppercorns, crushed-10 to 12 seeds
* Dried melon, muskmelon seeds-2 tsp
* Milk, chilled -3 cups
* Sugar -6 tsp or as required
* Water -2 cups
* Rose petals for garnish
* Saffron -pinch of
* Small Cardamom -3 to 4
* Crushed ice.
Methods/steps
1. Soak the almonds and pistachios in warm water till their skins peel off.
2. Dissolve the sugar in warm milk with saffron .and keep it in the fridge for chilling.
3. Bring the water to boil in a small sauce pan. Add the spices along with nuts and poppy seeds .Remove from heat and set aside to cool for 10 minutes.
4. Make a fine paste with the help of grinder.
5. Pour the paste into a strainer lined with a damp cloth and set over a clean bowl. Squeeze all the juice out of the nuts n spices by tightening the cloth by wringing it.
6. Mix the juice with chilled milk stir well .
7. Serve in glasses with crushed ice and rose petals


Additional Tips
* You may use the remaining nut pulp for thickening vegetable curries .
* You can use honey in place of sugar.
