Tikari/ Balushahi

Description

Tikari/ Balushahi is the mouth watering desert which very popular among bhojpuries. This dessert is made especially during the festival of Diwali, Teej and Durga Pooja.

* Refined flour/maida-250 g
* Desi ghee-125g
* Baking powder or soda bicarb-1tsp
* Sugar-250g
* Curd-2 tbs
* Water-2 cup
* Ani seed/saunf -1tsp
* Silver sheet for decoration
* Oil or ghee for frying

Methods/steps

1. Sieve the flour & baking powder or soda bicarbonate together twice.
2. Rub 125g ghee into the flour lightly. add aniseed to the flour .
3. Add curd,  water gradually and prepare a very light and stiff  dough. Cover with a dry cloth. and keep it at least 1/2 an hour .
4. Boil together the sugar and water. in a pan
5. Prepare a thick sugar syrup.(one string consistency)
6. Heat ghee in a pan. and cool to a lukewarm stage. Again keep on a low flame.
7.  Take a small portion of the dough, mould into a ball .Flatten them slightly and press each with the thumb at the center.
8. Deep fry on a slow flame till half done on both the sides. Fry to golden brown on medium flame. trick to getting this sweet is frying perfectly
9. When cold, dip in the sugar syrup.
10. Arrange Tikaries on a tray and decorate with silver sheets.
